Food, wine, and service fall under Ellen’s direction with the help of her talented food and beverage team. You might say she’s obsessed with it. In fact, most of her vacation time with husband John Lee is spent observing the way other restaurants around the world do things.
Ellen is the one who makes selections for the Bistro’s 175+ label wine list. This is really a challenge, since the cost of importing wines in to Belize is so high. Her focus has been price-accessible, high quality wines that compliment the menu that John and Chef Mary Kay have put together. She’s often seen helping customers choose a good bottle to go with dinner.
